Fluffy Buttermilk Pancakes with Berries

Weekend mornings deserve pancakes that are fluffy, golden, and just sweet enough — no restaurant required. This buttermilk batter comes together in one bowl and cooks up light with crisp edges, perfect for piling high with fresh berries and a drizzle of maple syrup.

Ingredients

  • 1½ cups all-purpose flour
  • 3½ tsp baking powder
  • ¼ tsp salt
  • 1 tbsp sugar
  • 1¼ cups buttermilk
  • 1 large egg
  • 3 tbsp melted butter, plus more for the pan
  • 1 cup mixed fresh berries, for serving
  • Maple syrup, for serving

Instructions

  1. Whisk the flour, baking powder, salt, and sugar together in a large bowl.
  2. In a separate bowl, whisk the buttermilk, egg, and melted butter.
  3. Pour the wet ingredients into the dry and stir just until combined — a few lumps are fine.
  4. Heat a lightly buttered skillet or griddle over medium heat. Pour ¼ cup batter per pancake.
  5. Cook until bubbles form on the surface, about 2–3 minutes, then flip and cook 1–2 minutes more until golden.
  6. Serve warm, topped with berries and a generous drizzle of maple syrup.
