  3. Meanwhile, whisk together the lemon juice, tahini, garlic, remaining 2 tbsp olive oil, and a splash of water until smooth; season with salt.
  4. Divide the cooked quinoa between two bowls and top with cherry tomatoes, cucumber, red onion, olives, and feta.
